Sophie’s go to avocado and egg breakfast

Ingredients

  • 1 Avocado

  • 2 eggs

  • 5 cherry tomatoes

  • Fresh herbs (I generally use parsley or coriander)

  • 1 tsp Salt

  • 1 tsp pepper

  • 1 tbsp Balsamic dressing

Method

  • Boil two eggs to your liking (I simmer for 6 minutes for soft boiled). Once cooked pop into a bowl of cold water so they stop cooking.

  • Cut the avocado into small chunks

  • Quarter or half the cherry tomatoes

  • Chop the herbs and place all onto a plate

  • Peel and add the eggs onto, with salt and pepper, then drizzle over some balsamic.
