Sophie’s go to avocado and egg breakfast

Ingredients
1 Avocado
2 eggs
5 cherry tomatoes
Fresh herbs (I generally use parsley or coriander)
1 tsp Salt
1 tsp pepper
1 tbsp Balsamic dressing
Method
Boil two eggs to your liking (I simmer for 6 minutes for soft boiled). Once cooked pop into a bowl of cold water so they stop cooking.
Cut the avocado into small chunks
Quarter or half the cherry tomatoes
Chop the herbs and place all onto a plate
Peel and add the eggs onto, with salt and pepper, then drizzle over some balsamic.
