Strawberry and blueberry overnight oats

Serves: 4 / Ready in: 10 mins + overnight soaking / Difficulty: 2/5 / Storing: Store in sealed contains up to 4 days, in the fridge.

Ingredients

  • 270g oats

  • 1 litre almond milk

  • 8g chia seeds

  • 125g blueberries

  • 440g strawberries

  • A squeeze of lemon juice

  • 4tbsp greek yoghurt

  • 2tbsp honey

Method

  • Quarter the strawberries and place them into a bowl with a squeeze of lemon juice.

  • In a large bowl, mix together the rest of the ingredients apart from the blueberries, then fold in the strawberries and blueberries at the end so as not to squash them too much.

  • You can then portion the oats up or keep them in one large bowl. Ensure the bowl is sealed well and keep it in the fridge.

  • The overnight oats will last up to 4 days in the fridge. You can top the oats with more fresh fruit, granola, nuts and much more.
