Mango and Salmon Poke Bowl
This recipe gives you the freedom to design your bowl how you like. The main components are like every meal, you need protein, veggies, some fats, and a base carbohydrate then add acidic, salt and sweet to bring the dish together.
Serves: 2 / Ready in: 30 mins / Difficulty: 3/5 / Storing: Best eaten fresh, can be stored in a sealed contain in the fridge for up to 3 days.
Protein options:
Vegetarian: Tofu, Tempur, Seitan, egg, beans
Meat/Fish: Smoked salmon, fresh tuna, cooked chicken, cooked beef
Veggies and fruit:
Peppers, cucumber, avocado, tomatoes, pickled ginger, edamame, red onion, spring onions, wakame salad, mango, pomegranate seeds, radish, cabbage, chilli
Base carbohydrates:
Rice (white, wild, brown, red or black), quinoa, cauliflower rice, bulgar, egg noodles, vermicelli noodles, soba noodles
Dressings:
My go-to: Soy sauce, fish sauce, ginger and garlic powder, lime juice and sesame oil.
Mango: Blend together, 1/2 a mango, 1 lime juice, 1 tbsp rice vinegar, 1tbp sesame oil, 1 tsp sriracha or hot sauce, and water as needed to thin out
Sriracha Aioli: 1tbsp Sriracha, 1 garlic clove crushed, 1 tsp runny honey, 3 tbsp mayonnaise, 1 tsp soy sauce and water to thin out
For this dish, I used: Smoked salmon, wild rice, cucumber, pickled ginger, avocado, edamame and mango.
Cook the rice as per pack instructions. If using frozen edamame, boil a little pan of water and add the edamame for 4 minutes, drain and allow it to cool down while preparing the rest.
This meal is about putting different ingredients onto your fork and tasting different combinations, so be sure to slice and cut everything into small pieces, either into strips like pepper or small cubes like the mango.
Then it’s time to plate up, place the rice in first then work your way around adding the different ingredients into small piles around the bowl. I top it with fresh chilli and sesame seeds.
Then to make the dressing, grab a little jar with a lid. Add soy, fish sauce, sesame oil, garlic and ginger powder with some freshly squeezed lime juice. Put the lid on, shake to mix, taste and adjust to your liking.
