Refreshing lemon, blueberry and poppy seed overnight oats

Serves: 5 / Ready in: 15 mins / Difficulty: 2/5 / Storing: Store in sealed containers for up to 5 days.

Ingredients

  • Zest of a lemon

  • 1 tbsp Lemon essence

  • 2 tbsp honey

  • 1 tbsp cinnamon powder

  • 420g cups rolled oats

  • 850ml almond milk, unsweetened

  • 250g blueberries

Optional extras

  • 5 tbsp hemp seeds

  • 5 tbsp greek yoghurt

Method

Place the oats in a large bowl, add the lemon zest, essence, almond milk, honey, poppyseeds and cinnamon, give it a good mix together. Using a fork helps spread the ingredients evenly throughout the oats.

Now split the oats across 5 containers. Wash and split the blueberries across the containers. If you are using them also add the hemp seeds and greek yoghurt.

Seal them up and pop them in the fridge overnight. Ready to take out and enjoy!
